Prior to SP1 I was able to easily switch from High safety(sync) to High
Perf(async) by clicking the radio button in the Mirror... dialog.

Am I missing something obvious or has something changed between RTM and SP1?

My new environment is mirroring to two instances on same server with a
second machine as the witness server and I'm configuring it with a witness
server.

any insight appreciated

thanks

Nothing has changed that I'm aware of.  You need to pause the mirroring
session, switch the mode, and then resume the mirroring session.
