If you run SQL Server 2005 Standard Edition in compliant mode 80, can you
still utilize log shipping, database mirroring, or clustering?  If it is
possible, are there any problems related to the setup or administration?

you can't do mirroring as it is supported on the enterprise edition.
Clustering is supported and will work in 80 mode. Log shipping doesn't need
the wizards, so you can build it on any version or SKU of SQL server.
