In what way?
2005 isn't installed in a certain licensing mode (like per processor or so).
For *edition change* you need to run setup from command-line to "upgrade" to some other edition.

OK, I have a system installed with a developers edition with a
developers licence key.
I want to switch that system to use standard edition, with a different
license key (for the standard edition);
I know I can change the edition, but can I enter a different license
key as well?

Did you use a license key while installing your Developer Edition of SQL
Server 2005?
And, does your Standard Edition ask you for a license key while installing
it?
